Madeleine is a traditional small cake with a distinctive shell shape from Commercy in norther-eastern France. Made from simple ingredients like flour, soy milk, vegan butter and sugar, these delicate madeleines are baked to golden-brown with a tint of caramel around the edge. It has a light, airy texture similar to a sponge cake with notes of lemon peel and herbs.
